As a lover of all things sweet, I am always on the hunt for a healthy sweet alternative.  I came across this recipe when my mother-in-law made me an energy bar.  They tasted delicious (tasty enough for my husband to enjoy), and didn’t leave me feeling guilty and bloated. I stole the recipe, made a few tweaks, and rolled the ingredients into balls rather than bars.  By eating them in small balls, I cut the calories by almost 75%.  These energy balls are perfect for a post-workout snack, or a mid-afternoon pick me up.

Grab N’ Go Energy Balls

Ingredients

  • 1 cup Organic Gluten Free Oats
  • 1/2 cup Organic Almond Butter
  • 1/4 cup Organic Chia Seeds
  • 1/3 cup Vegan Chocolate Chips
  • 1/2 cup Shredded Organic Coconut
  • 1/3 cup Organic Honey

Directions

Step 1
Thoroughly mix all the dry ingredients (oats, chia seeds, shredded coconut).
Step 2
Slowly add the almond butter and honey. Once mixed fold in the chocolate chips.
Step 3
Transfer the mixture into a bowl, and refrigerate for 15-20 minutes.
Step 4
Using an ice cream scooper or medium sized spoon, create dough balls and place on a parchment lined plate, and place in freezer for about 20 minutes, or until firm.
