As a lover of all things sweet, I am always on the hunt for a healthy sweet alternative. I came across this recipe when my mother-in-law made me an energy bar. They tasted delicious (tasty enough for my husband to enjoy), and didn’t leave me feeling guilty and bloated. I stole the recipe, made a few tweaks, and rolled the ingredients into balls rather than bars. By eating them in small balls, I cut the calories by almost 75%. These energy balls are perfect for a post-workout snack, or a mid-afternoon pick me up.
Grab N’ Go Energy Balls
Ingredients
- 1 cup Organic Gluten Free Oats
- 1/2 cup Organic Almond Butter
- 1/4 cup Organic Chia Seeds
- 1/3 cup Vegan Chocolate Chips
- 1/2 cup Shredded Organic Coconut
- 1/3 cup Organic Honey
Directions
Step 1 |
Thoroughly mix all the dry ingredients (oats, chia seeds, shredded coconut). |
Step 2 |
Slowly add the almond butter and honey. Once mixed fold in the chocolate chips. |
Step 3 |
Transfer the mixture into a bowl, and refrigerate for 15-20 minutes. |
Step 4 |
Using an ice cream scooper or medium sized spoon, create dough balls and place on a parchment lined plate, and place in freezer for about 20 minutes, or until firm. |
