Zesty Rustic Salad – Dressing
Ingredients
- 3 tablespoons yogurt
- 1 tablespoon avocado oil
- 1 teaspoon dijon mustard
- 1/2 lemon’s zest
- 1 pinch salt and pepper
- 1 teaspoon lemon juice

Blend together. You can adjust the salt to your tasting. |
Zesty Rustic Salad
Ingredients
- 2 cups baby spinach
- 8 asparagus spears (or 3/4 cup chopped asparagus)
- 1/2 cup fresh peas or frozen peas thawed over warm water
- 1 handful broccoli rabe
- 1/4 crumbled feta, goat’s cheese or a farm house cheese
- 1/2 cup rustic crackers broken into small pieces

Step 1 |
Chop up the asparagus, thaw the frozen peas if you didn’t get fresh peas, grill or pan fry the broccoli rabe with a little olive oil just util you have a nice char or slightly browned and a little soft. |
Step 2 |
Either layer all of the ingredients into two different bowls and top with dressing or you can combine all the ingredients into one big bowl and toss with the salad dressing. |
